Summer Fresh Noodles in a Snap!

So many people ask me, how can they make their own vegetable noodles?

These noodles – sometimes also known as zoodles – are a wonderful alternative to pasta during the hot summer months when you can take advantage of an abundance of farm fresh veggies.

When the heat is on, lighter fare can be a godsend. Not only that, they are lighter and more nutritious than pasta! Plus it’s a great way to use up all of the zucchini that are over-running everyone’s garden.

They look gorgeous, which is why some people feel intimidated to make them, but in reality they are so simple, easy and delicious! It’s an easy way to start increasing your intake of vegetables!

Here’s what you need to create a simple side on a hot summer night.

Ingredients

Lots of vegetables (of course!)

1 medium zucchini

1 medium sweet potato or 1 medium carrot

A vegetable spiralizer creates beautiful curly noodles, and they are easily found at kitchen supply stores and places like Homesense. If you don’t have a vegetable spiralizer, you can also use a vegetable peeler and make vegetable ribbons.

You can eat these raw, or lightly steam them after making the beautiful spirals.

Top simply with either butter/olive oil, salt and pepper, or get a bit fancier by adding pesto or a homemade marinara sauce.

Many times it is the simplest things that are the BEST!
